The blade is made from Ginsan stainless steel, prized for its excellent hardness, edge stability, and corrosion resistance—delivering a sharp, reliable edge that’s easy to maintain. Finished with a refined nashiji (“pear skin”) texture and crafted in Seki, Japan, this knife pairs serious cutting performance with standout style. An octagonal stabilized maple wood handle offers a secure, balanced feel, while the series’ signature choil notch with rounded spine and choil makes it exceptionally comfortable in a chef’s pinch grip for long prep sessions.
