The Kitayama 8000 grit whetstone is highly recommended by professional sharpeners in Japan, particularly for finishing and polishing the edges of carbon steel chef's knives. It is slightly softer than other comparable high grit stones, so it is ideal for creating a kasumi finish on your blade. This stone does not require soaking, simply splash and go. Do not leave in water. Made in Kyoto, Japan by Imanishi.
